Yes — remove the plates and it works as a standard stainless steel kadai for sautéing or curries, not just steaming.
How much water goes in before steaming?
Fill water 2-3 inches deep, just below the lowest plate, so steam builds without touching the batter directly.
Do the plates fit steamers from other brands?
Plate fit is specific to base diameter and rim design, so they're built to seal properly only with the kadai they're sold with.
